For starters, it’s crafted like its (far) pricier counterpart, Champagne, where the all-important second fermentation that gives the wine its bubbles happens right in the bottle. Called the traditional method – método tradicional in Spain – it’s a labor-intensive process, but the payoff for YOU is deliciously complex flavors and teeny, tiny beads of creamy mousse.
